Cod and Pepper Salad

Cod Salad Ingredients (Serves 4)

- 400g cod

- 8 Pedro Luis piquillo peppers

- 1 liter of olive oil

- a sprig of parsley

- chives

- chervil

- 4 tablespoons of sherry vinegar

- salt

- pepper

- 2 egg yolks

- mixed salad greens

Cod Salad Preparation:

Gently cook the cod loin over low heat without letting it boil and set aside.

Do the same with the piquillo peppers, until they begin to brown. Drain and set aside.

Make a mayonnaise with the egg yolks and the cod oil and place it in the center of the plates.

Remove the cod flakes and arrange them next to the piquillo peppers in a ring shape on top of the mayonnaise. Assemble the salad.

For the herb vinaigrette, place the different herbs in a Thermomix along with the oil and sherry vinegar. Adjust the salt to taste.

Presenting the Cod Salad

Place the cod flakes in the center of the plate (just on top of the mayonnaise) and arrange the piquillo peppers on top along with some salad. Drizzle and garnish with the vinaigrette.
