Red Beans from La Bañeza (serves 2)
Ingredients for Red Beans from La Bañeza
- 200g canned red beans,
- 1 Potato,
- 1 Onion,
- 1 clove of Garlic,
- (to taste) 1 Carrot,
Oil and salt,
Preparation of Red Beans from La Bañeza
Boil the chopped potato over low heat for 15 minutes.
Meanwhile, fry the onion and garlic.
Add the beans to the pot, cover with a little water, and bring to a boil. Add the chopped potato and the sautéed onion and garlic, season with salt, and simmer for 10 minutes over low heat, stirring occasionally to prevent the beans from sticking. (I haven't included carrots in this recipe because they take longer to cook than potatoes, but you can boil them separately and then add them to the pot. If the beans are cooked for too long, they will fall apart.)
