Mejana Ingredients (per person)
1 canned Tudela artichoke (Pedro Luis brand)
1 prawn
1 clove of garlic
10g Iberian pancetta
50ml extra virgin olive oil
Salt
Mejana Preparation:
Drain and halve the artichoke. Grill it with a drizzle of oil and set aside. Heat olive oil in a frying pan, sauté the garlic, and add the peeled prawn tail (without removing the end). After two minutes, add the reserved artichoke, turn it twice, and remove from the heat. Lightly fry the slice of pancetta on the griddle; All that's left is to assemble it: place the Iberian pork belly on the plate, top it with the artichoke, garlic fillets, and the prawn tail. Drizzle over a little of the frying oil, and finally add a touch of extra virgin olive oil.
