Elaboration of Lagar de Cervera

After passing through the selection and destemming table, the best bunches were cooled until reaching 10º C for subsequent maceration for 10 hours. After this time they were gently pressed in an inert atmosphere, thus avoiding any oxidation. After decanting, the clean must fermented at 15º C. In this harvest we carry out malolactic fermentation in 15% of the tanks. The wine has been preserved until its bottling with its fine lees which, by means of periodic bazuqueos, are kept in suspension thus providing complexity to the wine.

The winery Lagar de Cervera 

We were looking for excellence in white wines and we have found it. On the shores of the Atlantic, in the heart of Rías Baixas and nestled in a privileged microclimate, is our Galician winery Lagar de Cervera. There, in 1988, we began the task of forming the largest vineyard of Albariño in this wine region, a grape of extraordinary quality with which we made the monovarietal Lagar de Cervera and the pomace Viña Armenteira.
Just 25 years after our arrival in Galician lands, we have totally remodeled our winery, equipping it with the most modern and careful techniques that currently exist, allowing us to achieve our main objective: to obtain, harvest to harvest, the best Albariño Lagar de Cervera possible.

Denomination of Origin of Lagar de Cervera 

Rías Baixas is a designation of origin belonging to the region of Galicia. Specifically the form the coastal part of a part of Galicia, concerning the province of La Coruña, the province of Pontevedra to the Ria de Vigo.
