Elaboration of Pesquera Reserva

The wines of 'Pesquera' are always made from whole fruits, destemmed. The fermentation, at a controlled temperature, lasts between two and three weeks. After pressing, and without clarifying, the wines go directly to a wise and subtle combination of American and French oak barrels with different toasted. There they will rest, between frequent trasiegos, during 18 months the 'Red Fish'.
Its elaboration is totally traditional, with destemming and subsequent alcoholic fermentation in stainless steel tanks.
Atlantic continental climate, dry and windy, with very hard winters, long and cold and short, dry and hot summers. Area with a rainfall of 400 mm per year, being able to delimit two zones: one on slopes with greater insolation, which gives rise to an earlier maturation; and another one in plain, with less insolation and a slower maturation.
