In the 70s of the 20th century, the first steps were taken to create what would become the Toro Denomination of Origin over time, the culmination of which came in 1987.

Varieties of grapes used in San Roman Crianza wine

San Román is a single varietal of the Tinta de Toro variety, a typical variety of the D.O. Bull.
The grapes come from different plots planted with 45-year-old old vines at an altitude of 750 meters above sea level, with stony and sandy-clay soils. The climate is an extreme continental climate with very little rain, many hours of sun and strong thermal contrasts between day and night, which favors the correct ripening of the grape. Each parcel is vinified separately.
San Román ages for 24 months in French and American oak barrels, barrels that are renewed by 20% with each vintage.
