Elaboration Viñas del Vero Pinot Noir 

This year the Pinot Noir reached its optimum point of maturity on August 22. Given the delicacy of this variety, we carry out the harvest at dawn, in small batches, to be able to work it in a cellar in a staggered way. Thus we gradually obtained the musts, which were left to marinate for 15 minutes to obtain the intensity of color sought in this rosé. The fermentation was carried out only with wort flower and at low temperature. After three racking and subsequent stabilization, the wine was bottled on November 24.

From DO Somontano wines from this region are grown in areas with cold winters and hot summers. In spring and autumn sudden changes in temperature are frequent. The average annual temperature is 11 degrees Celsius.

The Pinot Noir grape

The vineyards of Pinot Noir of Viñas del Vero are planted with northeasterly orientation, which guarantees a good protection of their delicate grapes against the midday sun. The soils are colluvial deposits of the quaternary in terraces and glacis, poor, with frank texture and a slope of 25% which implies an excellent drainage. The plant material comes from the Cote d'Or. The pruning is done in simple Guyot, typically Burgundian.
