Primary fermentation takes place in stainless steel tanks at a controlled temperature, allowing for gradual extraction of the essential compounds. The wine is then transferred to French and American oak barrels, where malolactic fermentation begins and the nuances of flavour and aroma develop. The barrel ageing process adds layers of complexity, giving the wine notes of vanilla, spices and subtle smoky touches.
