How Pyjama Mencía is produced

We produce it using spontaneous fermentation without the addition of sulfur and with native yeasts. Our Pyjama is woven with grapes from each and every one of our plots, thus being a clear example of our unique terroir.

The Demencia de Autor winery

The Demencia de Autor winery belongs to the Bierzo Designation of Origin (DOC), where they lovingly tend 3 hectares of their own vineyards in Villadecanes and Villafranca del Bierzo, with an average age of over 50 years. The vineyards are bush-trained, and all work is done manually.

Pyjama Mencía Designation of Origin

It belongs to the Bierzo DO. The Bierzo region is located in the northwest of the province of León, in northern Spain. It borders the provinces of Ourense, Lugo, and Asturias. It occupies an area of ??approximately 3,000 square kilometers.
Its cultivation system is smallholder, as properties have been passed down from father to son through inheritance, and with each transfer, the estates are increasingly divided and subdivided. In this sense, it is very similar to what happens in Burgundy, for example.
It has a moderately undulating terrain that allows for a distinction to be made between the estates with better sun exposure and those with less sun exposure, and each has the potential to produce a different wine.
The average altitude is approximately 650 meters above sea level. Its soil is composed of a mixture of clay, limestone, quartzite, and slate.
