Elaboration of Valduero Finca Azaya
The grapes, harvested by hand in 14Kg boxes, are fermented for 9 days between 23º and 28º C and macerated for 10 days. A time, in which when reaching the maximum fermentation temperature, we carry out a daily pump-over process. The last step is to let the wine rest in oak barrels of two origins for 14 months and at least 12 more months in the bottle.

Valduero is a family winery that was born in 1984. It was created by Gregorio García Álvarez in the small Burgos town of Gumiel de Mercado, located 16km northwest of Aranda de Duero, in the heart of the Ribera del Duero.
